Ingredients:

  • 1 cup of water
  • 1 cup of milk
  • 2 teaspoons of tea leaves
  • Sugar to taste
  • 1/4 teaspoon of cardamom powder
  • 1/4 teaspoon of ginger powder
  • A few biscuits of your choice

Instructions:

  1. Boil the water in a saucepan.
  2. Add the tea leaves, sugar, cardamom powder, and ginger powder.
  3. Let it simmer for a few minutes until the flavors are well combined.

2. Rava Upma

Ingredients:

  • 1 cup of semolina (rava)
  • 2 cups of water
  • 2 tablespoons of oil
  • 1/2 teaspoon of mustard seeds
  • 1/2 teaspoon of cumin seeds
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • Salt to taste
  • A few curry leaves
  • A handful of coriander leaves, finely chopped

Instructions:

  1. Heat the oil in a pan and add the mustard seeds, cumin seeds, and curry leaves.
  2. Once they start to splutter, add the chopped onions and green chilies. Sauté until the onions become translucent.
  3. Add the semolina and roast it on a low flame until it turns golden brown.
  4. Meanwhile, boil the water in another pan.
  5. Slowly add the boiling water to the roasted semolina while stirring continuously to avoid lumps.
  6. Cover the pan and let it cook on a low flame for a few minutes.
  7. Once the water is completely absorbed, turn off the flame and add the chopped coriander leaves.
  8. Serve the upma hot.

3. Moong Dal Khichdi

Ingredients:

  • 1/2 cup of moong dal (split yellow gram)
  • 1/2 cup of rice
  • 2.5 cups of water
  • 1/2 teaspoon of turmeric powder
  • Salt to taste
  • 2 tablespoons of ghee (clarified butter)
  • 1/2 teaspoon of cumin seeds
  • A pinch of asafoetida (hing)

Instructions:

  1. Wash the moong dal and rice together and soak them in water for about 30 minutes.
  2. Drain the water and transfer the moong dal and rice to a pressure cooker.
  3. Add the turmeric powder, salt, and water. Cook it for 3-4 whistles or until it’s cooked well.
  4. In a separate pan, heat the ghee and add the cumin seeds and asafoetida.
  5. Once the seeds start to splutter, add it to the cooked khichdi and mix well.
  6. Serve the khichdi hot with a spoonful of ghee on top.
