Instructions:
- Heat the oil in a pan and add the mustard seeds, cumin seeds, and curry leaves.
- Once they start to splutter, add the chopped onions and green chilies. Sauté until the onions become translucent.
- Add the semolina and roast it on a low flame until it turns golden brown.
- Meanwhile, boil the water in another pan.
- Slowly add the boiling water to the roasted semolina while stirring continuously to avoid lumps.
- Cover the pan and let it cook on a low flame for a few minutes.
- Once the water is completely absorbed, turn off the flame and add the chopped coriander leaves.
- Serve the upma hot.
3. Moong Dal Khichdi
Ingredients:
- 1/2 cup of moong dal (split yellow gram)
- 1/2 cup of rice
- 2.5 cups of water
- 1/2 teaspoon of turmeric powder
- Salt to taste
- 2 tablespoons of ghee (clarified butter)
- 1/2 teaspoon of cumin seeds
- A pinch of asafoetida (hing)
Instructions:
- Wash the moong dal and rice together and soak them in water for about 30 minutes.
- Drain the water and transfer the moong dal and rice to a pressure cooker.
- Add the turmeric powder, salt, and water. Cook it for 3-4 whistles or until it’s cooked well.
- In a separate pan, heat the ghee and add the cumin seeds and asafoetida.
- Once the seeds start to splutter, add it to the cooked khichdi and mix well.
- Serve the khichdi hot with a spoonful of ghee on top.
